Amilton Souza de Mello Junior

Amilton Souza de Mello Junior earned his DVM from University of Marilia, Brazil in 2001. After one year working in the Brazilian meat industry, he entered a graduate program at Sao Paulo State University, Brazil, where he earned his M.S. degree in meat science in 2002. In 2010, he earned his Ph.D. in meat science and muscle biology at the University of Nebraska - Lincoln. During his academic life Amilton was awarded by diferent institutions and published more than 75 journal articles, technical reports, and magazines articles. In 2012, he joined the Quality Assurance Beef Group at JBS U.S where he works with food safety and R&D. During his academic life, his research related to innovation on meat fabrication, animal welfare, microbiology, and quality systems. Amilton was one of the pioneers to identify the effects of feeding distillers grains on beef quality and show to the american beef industry that beef from animals fed this feedstuff required special care when displayed under retail conditions due to the increase of polyunsaturated fatty acids.
bachelor's at Medicina Veterinaria from Universidade de Marília (2001), master's at Veterinary Medicine from Universidade Estadual Paulista Júlio de Mesquita Filho (2005) and doctorate at Meat Science from University of Nebraska-Lincoln (2010). Has experience in Veterinary Medicine, focusing on Inspection of Products of Animal Origin, acting on the following subjects: beef, distillers grains, fatty acids, vitamin e and distiller's grains.
