Augusto Reinaldo Pimentel Guimarães
Nutritionist. Full professor at the State University of Ceará. PhD in Food Sciences and Experimental Nutrition at the Faculty of Pharmaceutical Sciences at USP (Universidade de São Paulo) under the guidance of Prof. Dr. Rui Curi (Institute of Biomedical Sciences).It contributed to clarify the effects of dietary fatty acids (saturated, w6 and w3) on the metabolism of glucose and glutamine in lymphocytes and macrophages during Aging, Cancer and Diabetes. He did an internship as a postdoctoral visitor at Oxford University. It was distinguished as USP Postgraduate Award (one of the best doctoral theses defended in 1992 at USP).From his doctoral thesis, he founded Nuteral Indústria de Formulações Nutricionais Ltda, a company that develops and markets innovative nutritional solutions throughout the country.About twenty years of experience developing food for enteral and oral nutrition, building strong commercial brands.Wisdom and patience to always learn. I have devoted special attention to new ingredients with nutritional properties, and analytical methodologies based on machine learning.Scientist, entrepreneur driven by innovation, high technology in food and nutrition.
